Something a little different. Tangy tasty chicken in an orange based sauce.

  1. 8 chicken drumsticks
  2. 4 Tablespoons flour
  3. oil to brown
  4. 4 Tablespoons good marmalade
  5. 1 teaspoon powdered ginger
  6. 2 cloves of garlic
  7. 2 tablespoons soya sauce
  8. 1/4 cup orange juice
  9. 1 1/2 cups light chicken stock (or water)
  10. a sprig of thyme
  1. Coat drumsticks with the flour in a plastic bag.
  2. Brown in hot oil in a frying pan.
  3. Put in a medium sized pot.
  4. Add the rest of the ingredients to the frying pan and heat together.
  5. Pour over the chicken in the pot.
  6. The liquid should just cover the chicken, if not add a little more stock/water.
  7. Simmer with the lid on for 10 minutes.
  8. Put the pot in a Heylo bag and close the Velcro tabs.
  9. Do up the drawstring.
  10. Push the beads up around the pot to fully insulate it.
  11. Leave undisturbed for 1 hour to 1 1/2 hours.
  12. Remove the drumsticks.
  13. Keep warm, and thicken the sauce with a little tapioca or cornflour.
  14. Serve with rice and some colourful vegetables on the side.
  15. Enjoy.
